Recipe: Quick & healthy guacamole

Cinco de Mayo is this Saturday, and in Texas, the holiday is a big deal here just north of the border. May 5th celebrates Mexico’s victory over the French in the Battle of Puebla in 1862, but in the United States, it’s primarily a day celebrating Mexican-American culture. Mostly, though, it’s an excuse to drink margaritas, eat tacos, and wear sombreros. For restaurants and bars, it’s a big money-making weekend.If you prefer to host your own Cinco de Mayo party at home, here’s a simple dip and condiment beloved by all. We all know avocados have been having their moment for the last several years (think of all the avocado toast photos you’ve seen on Instagram), and this guacamole makes great use of the fresh, ripe, buttery fruit. Guacamole is healthy, too (unless you down it with a gigantic burrito as big as your thigh), so why not hit all the high notes with this snack? It’s easy, healthy, and tasty—hay nada mejor.¡Feliz Cinco de Mayo, amigos!

Recipe: Guacamole

Notes: Serve your guacamole with tortilla chips, tacos, fajitas, or just about any Tex-Mex fare.

Ingredients

  • 3 avocados, peeled & pitted
  • 1/2 to 1 lime, juiced
  • 1/4 red onion, finely chopped
  • 1 clove garlic, minced
  • 3 tbsp finely chopped cilantro
  • 1 jalapeño pepper, seeded if desired & finely chopped, or 1 pinch ground cayenne

Instructions

  1. Make guacamole: In a medium bowl, mash together avocado, lime juice, and salt to taste with a fork. Fold in onion, garlic, cilantro, and jalapeño. Cover and chill at least 1h.
  2. Serve with tortilla chips or as a condiment for your Tex-Mex dish.
