Christine Ha Pop-up Episode 2 tonight at Glitter Karaoke in Houston

It’s been a long while since my first pop-up restaurant in Houston almost three years ago. I’ve been traveling and working on other projects in television and public speaking. This year, though, I hope to focus on my own personal culinary goals, and that means…drumroll, please…developing my own restaurant concepts which I hope to open in the near future.I always get asked when I’m going to open my own restaurant, and the time finally feels right. Of course, we are in the very early development stages of it all, I.e. I’ve been testing recipes, formulating menus, nailing down the feel and desired experience of my future place. We’ve been scouting locations both here and abroad but haven’t found our new food home yet.With these exciting goals on the horizon, the hubs and I have decided to do more pop-ups this year just to get our feet wet in the industry and test some of our recipes. I have very little experience working in a real commercial kitchen and cooking on a large scale, so pop-ups will give me more experience in the meantime.Tonight is Episode 2 of my very sporadic pop-up series, and it’s going down at Glitter Karaoke in downtown Houston. I used to frequent Glitter back in the day when it was located in southwest Houston—there were many hazy late nights there that usually resulted in a lot of laughter and terrible jokes. Now more than ten years later, I’ve changed jobs, and Glitter changed homes.Since Easter is this Sunday, I’m doing an Easter-inspired menu with the following prix fixe tastings:

• Saigonese-Scotch egg | Fish sauce caramelized pork sausage, panko, chives
• Goi bap cai | Cabbage, carrots, roasted peanuts, fried onion, ginger vinaigrette
• Masala Frito pie | Chicken, garam masala, Mexican four cheeses, cilantro

Cocktails:

• Buzz'd Bunny | Hazelnut, vodka, crème de cacao, half-and-half
• Kimchilada | Dos Equis beer, lime juice, kim chi puree, fish sauce, red pepper flakes
