The best Vietnamese spicy lemongrass beef noodle soup/bun bo Hue in Daning at Bun Bo Hue Ba Dieu

Bun bo Hue is one of my favorite Vietnamese noodle soups of all time. The broth consists of beef, pork, lemongrass, chiles, and shrimp paste, making it a balance of sweet, sour, savory, and spicy. It’s amazing!We hung out with Summer of Danang Cuisine, and the first of two meals we had together was this noodle soup at Bun Bo Hue Ba Dieu. The shop tends to close on a whim if the pot’s run dry, so I was relieved when we arrived shortly after sunset, and they said they were still open. The portions are smaller in Vietnam than in America (which probably offers partial explanation as to why Vietnamese people are so thin), and it was the perfect bowl of bun bo.The broth is so good, you don’t need to add anything, but you can customize to your liking with cabbage, bean sprouts, herbs, lime juice, and/or shrimp paste.So far, aside from my family’s homemade versions, this is the best bowl of bun bo Hue I’ve had in Vietnam. Dare I say bun bo Hue might be the next big thing to hit western palates after the pho craze simmers down. Have you had bun bo Hue?
